Boil pasta in salted water til al dente. While pasta is boiling....
Put olive oil and garlic in 12" pan. Let gently simmer for a couple of minutes, then add chicken. (If using strips, cut into bite size pieces).
While the pasta is cooking and chicken is heating through, slice tomatoes in half and roughly chop baby spinach. After chicken is heated through, add the spinach and let wilt, then add the tomatoes. Once they have softened a bit, add the cooked pasta and the cheeses and stir to combine. Let sit for just a minute or two to let the pasta soak up the flavors! NOTE* The olive oil and garlic serve as the sauce for this pasta dish, so you may need to adjust the amount of garlic to suit your taste. You may also sprinkle a little salt on the spinach and tomatoes when you add them, but that is to suit your taste also.
