I wanted to make a special dinner for my mother's 91st birthday today. She likes chicken breasts and really likes them made with the Kraft Fresh Take product-it has various flavors with bread crumbs and cheese. I did not have any and it is too cold to go to the grocery store. So, I attempted to make my own. So I threw some things together and they came out great and a lot less expensive. Hope you like it as much as my mother did. You can also vary this recipe by using other seasonings such as cayenne pepper and hot sauce added to the bread crumbs or use different types of cheeses.

Ingredients For italian baked chicken breasts

  • 1 c
    italian bread crumbs
  • 1/4 c
    grated parmesan cheese
  • 1/4 c
    finely shredded cheddar cheese
  • 1/4 c
    extra virgin olive oil
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/2 tsp
    basil, dried or fresh finely chopped
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    lemon pepper seasoning
  • 1/2 tsp
    paprika
  • 6
    skinless, boneless chicken breasts (i am sure you can also use skinless boneless thighs)

How To Make italian baked chicken breasts

  • 1
    Spray a 9 x 13 baking sheet with cooking spray or olive oil (I like to use the non stick foil and then spray the foil - makes clean up so much easier)

    Mix together the Italian bread crumbs & all of the listed seasonings as well as the cheeses.

    Blend the olive oil into the bread crumb & seasoning mixture; you may need to add more oil/bread crumbs until it is a rather thick consistency to allow it to stay atop the meat.

    Pat the bread crumb mixture on top of the chicken and bake for 30 - 45 minutes based upon the thickness of the chicken.
