Ingredients

SHELL
1 medium flour tortilla
FILLING
1 Tbsp sour cream
1 Tbsp white onion (diced small)
1/4 small chicken breast (cooked and broken apart)
2 Tbsp cold mashed potatoes
1/3 c lettuce (chopped)
TOPPING
1 Tbsp cheddar cheese (shredded)
1 Tbsp guacamole
1/2 Tbsp sour cream
Pinched by MUFFINMAN, and 35 more.

Colleen's Notes:

I created this for Sherri's Irish Flag Challenge... We could only use green, white and orange colored foods.

Being Irish.. I had to have my mashed potatoes of course!

It was fun and easy... and tasted really good!

*** The amounts you use in this recipe can be more or less according to your tastes!

 

Directions

Spread sour cream onto flour tortilla.

Sprinkle with onion

Scatter around chicken breast pieces.

Surround everything with dots of mashed potatoes.

Surface everything with the lettuce.

Put cheese over the lettuce.

Put a spoon of guacamole on top of the cheese.

Garnish with a dab of sour cream.

Hi Gloria! Thanks for the kind comments... The kids are doing well... they got to play out in the yard all day.... I think they were making mud pies again! They tracked mud all over... I am doing ok... didn't go to work all week... but hope to go back on Monday...

Oh Colleen this looks GOOD! I bet even sweet potato would be good! That would give it some orange too! I have a sweet potato burrito recipe that I haven't made in AGES that I'm going to dig out now!! Great idea!!

Awesome sammie, Colleen! I couldn't for the life of me come up with one this time, my brain just froze up! But this is definitely Irish and sounds good! I think maybe I'd like the taters warmed but that's just me...xoxo...good luck!
