Mr. Pete's Notes:

To my fellow JAP cooks, this one is definitely for you! I wanted to make something special since being new to the scene. After many wonderful welcomes and plenty of browsing, I finally received some inspiration to introduce to you Mr. Pete's Hot & Spicy Cajun Wings! I hope you will enjoy!

Directions

1
Rinse chicken wings and fold them around the drummettes to form a triangle as pictured. Sprinkle half of Mr. Pete's Cajun Seasoning onto the wings. Rub seasoning into chicken. Using the remaining Mr. Pete's Cajun Seasoning, repeat seasoning and rub into meat.

I never measure when seasoning, only because most of the seasoning falls off the chicken during sprinkling and sometimes in the fryer. That's why I like to apply a bit more to this dish. If you like your wings spicy like I do, make sure to use 6 tablespoons of Mr. Pete's Cajun Seasoning. If you cannot handle as much heat, use only 4 tablespoons. This recipe can be adapted to suit your personal tastes.

Fry seasoned chicken in oil at 350 degrees approximately 6-8 minutes. Depending upon the size of your wings, cooking times will vary.
2
Making the Sauce:
Melt butter in a skillet. Add garlic and hot sauce to pan. Stir until well blended and heated thoroughly and garlic becomes tender about 7 minutes.

Note: Many believe that "Hot sauce is Hot sauce." I, on the other hand, do not. I think that each brand offers different flavors. For this recipe, I like to use Louisiana Hot Sauce, as it is mild and offers a bit of sweetness in the flavor. You may use any brand of hot sauce for this dish. Just note that it may alter the flavor of your wings.
3
Finally, place each chicken wing individually into the skillet and coat with sauce. Plate and serve with your favorite sauce(s). Here we used Ranch and Honey Mustard. I also leave a few of the wings plain without the hot sauce mixture for variety.

yeah...the recipe is up!!!
I have to tell you though, I am one who has to "tone it down a bit" as I have a tender tongue that can't take too much heat.
It doesn't bother my stomach, as it usually can't get that far...=;D

I love chicken recipes, just not too too hot.

Cin, well that's the beauty of this recipe! You can use the 4 tablespoons of Mr. Pete's Cajun Seasoning, and I promise you will be pleasantly satisfied! My wife also likes hers with a little less spice. She also doesn't particularly care for hot sauce, which is why I leave a few pieces without the sauce. This recipe makes pleasing everyone easy!

I know that all too well. As Cajuns, we have a reputation for spicy foods. However, I can tell you that that is not the case. We Cajuns have a way of seasoning foods to enhance the flavors. I am excited that my spices do just that. Offering lower sodium products, consumers can put as little or as much as they like without having to worry about over salting a dish. I like to say 'It's packaged perfection!' lol

Thank you Cin,
