Hot Chicken Appetizers

I had to prepare something to take to a party tonight, and after working all day, I had no ideas. This is what I threw together, and it got such good reviews, I figured I'd best write it down. Enjoy!
(Measurements are approximate, since I wasn't measuring when I made it. Adjust to suit your taste.)

Ingredients

puff pastry sheet, thawed
1 Tbsp
butter
1/3 c
onion, finely chopped

cherry tomatoes, chopped
3/4 c
baby spinach, chopped
3 clove
garlic, minced
8 oz
cream cheese
1 can(s)
chicken, drained and chopped (13 ounce can)
parmesan cheese

Step-By-Step

1Melt butter in a saucepan over medium-high heat. Add onions and tomatoes and cook until onions are translucent. Reduce heat and stir in spinach and garlic.
2Cut cream cheese into small chunks and add to saucepan. Stir until well mixed and smooth.
3Add chicken to saucepan and stir until all ingredients are incorporated. Add salt and pepper to taste. Remove from heat and set aside.
4Preheat oven to 400 degrees F. Place three mini muffin pans on a large cookie sheet. (This is to make them easier to get in and out of the oven - not completely necessary)
5Unfold puff pastry sheet onto a lightly floured surface and roll to about half original thickness. Be sure to use enough flour to keep the pastry from sticking, but don't overdo it!
6Using a 2" biscuit cutter, cut pastry into circles. Press one circle into the bottom of each section of mini muffin pans. The pastry should extend only about half-way up the side of the sections.
7Place about 1 tablespoon of chicken filling into each pastry lined muffin section. Filling should pile up in the middle, leaving the edges of the pastry exposed.
8Lightly sprinkle the filling with parmesan cheese, then bake for 30 minutes. Serve hot. Makes about 36 appetizers.
