I absolutely Love Honey-mustard! Just so happens so does my youngest daughter! Not only is it delicious, it's also healthy.
My youngest is on a health kick, I wonder where she gets it from! haha.
She asked for this delicious chicken today. And beings as she usually gets what she wants, I made it.
This can be made in a skillet, cast iron grill, or on the grill.
I prepared in my cast iron grill.
With my homemade honey-mustard sauce. So tender and juicy! Served up with a side of my husbands delicious asparagus! Also goes well on a nice salad! Quick & easy too!

Ingredients

HONEY-MUSTARD SAUCE

1/2 c
honey
1/2 c
dijon mustard
2 Tbsp
light mayo
1 Tbsp
lemon juice
2 Tbsp
cider vinegar
2 clove
garlic, finely minced
1 Tbsp
low-fat butter

CHICKEN PREP

boneless, skinless chicken breasts
sea salt & fresh cracked pepper to taste

Directions Step-By-Step

In a small saucepan, add honey, Dijon mustard, light-mayonnaise,lemon juice, cider vinegar, minced garlic, & low-fat butter. Cook on low heat until honey is cooked into ingredients. About 5 minutes, Sauce will be thick. Remove from heat and set aside.

Yields approximately 1 cup.

If you have a cast iron grill skillet, brush with Olive Oil, and heat over medium-high heat.

Prepare chicken by tenderizing, season with Sea Salt & Fresh Cracked Pepper to taste.

Cook chicken about 5 minutes each side, or until chicken is no longer pink inside. Cook time will vary depending on thickness of chicken breasts.

Brush honey-mustard sauce over chicken on each side and cook about 2 minutes each side.

Serve with side of asparagus, or cut in slices and serve over cold salad! Use extra sauce for dipping or dressing!
