Homemade Shake n' Bake Mix
finely crushed saltine crackers
1Combine all ingredients. Mix well. Store in a tightly covered container. Keep in a cool, dry place for up to six months. Refrigerate or freeze for longer storage.
2To use: Place an appropriate amount of mix into a large plastic bag or ziplock bag for the amount of chicken or fish you will prepare.
3Moisten chicken or fish pieces with either water, beaten egg, buttermilk or salad dressing to coat, then into the bag. Shake to coat.
4Bake at 400 degrees until thoroughly cooked, about 45 minutes for bone-in; 20 minutes for boneless chicken or fish, or until done. Do not cover or turn chicken or fish while baking.
