Combine all ingredients EXCEPT rice in a large pot.
Over medium/high heat, bring to a rolling boil.
Reduce heat, cover and simmer one hour.
Add rice, stir, cover and cook another 20 minutes or until rice is cooked.

*While we've settled into the chicken rice variation most recently as our favorite, sometimes we switch to pasta. Cook as above, and instead of adding rice, add pasta and cook another 5 - 10 minutes until your choice of pasta is cooked through.
