Hearty Chicken Soup

Chicken soup is one of our family favorites all winter long. This recipe is the one we all love best! While it looks like a lot of ingredients, its easy and well worth the small effort ... promise!

Ingredients

3 c
chicken breast, cooked, diced (i use two 2 large breasts, parboiled)
2 pkg
swanson chicken broth (32 oz. each)
4 1/2 c
water
3
knorr chicken bouillion *specifically knorr, which is actually 2 regular cubes in each block* and i find the flavor best
3
bay leaves
1/2 tsp
italian seasoning
1/4 tsp
poultry seasoning
3 Tbsp
dried minced onion (or 1/3 cup diced fresh onion)
1/4 tsp
black pepper
1 tsp
parsley flakes
1 tsp
minced garlic
1 can(s)
hunts tomato sauce (8 oz)

large carrots, sliced thin
1/2
celery heart, including inner leaves, sliced thin
1/2 c
rice

Step-By-Step

1Combine all ingredients EXCEPT rice in a large pot.
2Over medium/high heat, bring to a rolling boil.
3Reduce heat, cover and simmer one hour.
4Add rice, stir, cover and cook another 20 minutes or until rice is cooked.
5Serve and enjoy :)
6*While we've settled into the chicken rice variation most recently as our favorite, sometimes we switch to pasta. Cook as above, and instead of adding rice, add pasta and cook another 5 - 10 minutes until your choice of pasta is cooked through.
