Ingredients
- 2 tablespoons butter, unsalted
- 1/4 small onion, finely chopped
- salt & pepper
- 5 cloves garlic, minced
- 1 - 14 oz cans diced tomatoes with onion & garlic, undrained
- 8 ounces parmesan cheese, fresh
- 3 tablespoons basil, fresh, chopped
- 2 tablespoons olive oil, extra-virgin
- 6 tyson breaded chicken breast patties, thawed
- 8 ounces mozzarella cheese, shredded
How To Make grilled chicken parmesan

Step 1Preheat oven to 400 degrees F.

Step 2Melt butter in medium saucepan over medium low heat. Add onion & 1/2 tsp salt & cook until onion is golden, 4 minutes. Add garlic & cook, 30 seconds. Stir in tomatoes with their juices & mash with potato masher until ground. Increase heat to high & bring to boil. Reduce heat to medium low & simmer until thickened slightly, 10 minutes. Turn off heat, stir in parmesan, basil, oil & season with salt & pepper.

Step 3Preheat grill to medium.

Step 4Place patties on baking sheert & season chicken patties with salt & pepper. Bake 7 minutes each side. Let cool, 5 minutes. Then grill patties, 3 1/2 minutes. Flip patties over & top each patty with 2 tbsp tomato mixture. Divide mozzarella among patties. Cook & cover until mozzarella starts to melt, about 3 1/2 minutes.

Step 5Transfer chicken to plate & tent with foil. Let rest 5 minutes before serving. Serve with remaining tomato mixture.
