I had misplaced this recipe and finally located it in one of my older cookbooks. Iused to make this frequently and found it was better even the next day. I love the flavors in this casserole and it is very easy to prepare.
Boil chicken and debone. Chop chili peppers and onion and add to soup and milk. Cook on low, stirring often. Soften tortillas by dipping them in hot oil until soft and drain on paper towel. (do not over cook or they will become hard).
Grease 9 x 13" pan. Layer: tortillas, soup mixture, chicken, cheese (alternate layers). Make sure that the cheese is the last layer. Top with ripe olives, optional. Bake at 350 degrees for 20 minutes. ENJOY!
