shredded cooked chicken
1/2 c
thinly sliced green onions
3/4 c
shredded cheddar cheese
3/4 c
shredded monterey jack cheese
1/4 c
sour cream
1 can(s)
(4oz) diced green chiles
1/4 c
chopped fresh cilantro
salt and pepper to taste
crisco oil as needed
corn tortillas
crisco no stick cooking spray


2 Tbsp
crisco oil
2 Tbsp
all purpose flour
2 Tbsp
chili powder
1 tsp
ground cumin
1 can(s)
chicken broth
1 can(s)
tomato sauce
1 tsp
1/4 tsp
garlic powder

Directions Step-By-Step

Heat Oven to 350 degress. Prepare Enchilada Sauce
Enchilada Sauce: Heat Oil in Large saucepan, Stir in flour and chili powder. Cook for 1 minutie. Add remaining Ingredients, bring to boil, and simmer for 10 min. Makes three cups of sauce
Enchiladas: Mix together chicken, green onions, 1/2 cup cheddar, 1/2 cup Monterey Jack, sour cream, chiles and cilantro in a medium bowl. Stir in 1/2 cup Enchilada Sauce, stir intil well blended. Season with salt and pepper. Set aside
