Ingredients For grape harvest roasted chicken

  • 1 lb
    grapes, seedless, red & green, halved (about 1 1/2 c each)
  • 6 - 7 lb
    chicken, whole, skin on
  • 1 stick
    butter, room temperature
  • 1 tsp
    herbes de provence
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 2
    shallots, thinly sliced
  • 1 c
    white wine
  • 1/2 c
    heavy cream

    Preheat oven to 350 degrees F.

    Place chicken in roasting pan (breast side down). Fill chicken cavity with 1/2 of mixed grapes. Reserve remaining grapes.

    In a medium bowl, combine herbes, salt & pepper; mix well. Add butter; mix to combine. Rub all over chicken. Roast 2 hours or until thermometer registers 180 degrees F., adding shallots & reserved grapes during the last 15 minutes of cooking.

    Transfer chicken to serving platter. Let stand 20 minutes before serving.

    Place roasting pan over 2 burners on medium high heat. Stir in wine; cook until reduced to 1/2, about 1 minute. Add cream; cook 3 minutes. Serve with chicken.
