Ingredients

4 boneless, skinless, chicken breasts halves
garlic powder to taste
seasoned salt to taste
1 Tbsp vegetable oil
1 jar(s) (4.5 oz) buttery sliced mushrooms, drained
1/2 c jack cheese, grated
1/2 c cheddar cheese, grated
1/2 c green onions, chopped
1/2 c crumbled bacon
1 can(s) chicken broth

Martha's Notes:

This smothered chicken is a little bit different than most smothered chicken recipes I have seen, but this is how grandma always made it. It is delicious! Looking at the ingredients, I also believe it is low-carb! - I am an on-again, off-again Dr. Atkins devotee. This "diet" does work, I just give up too soon when the carb cravings get too strong!
This dish has all of "the good stuff" - bacon, cheese, mushrooms... mmmm!

 

Directions

Flatten chicken to 1/4 inch thickness. Sprinkle with garlic powder and seasoned salt.

In a large, non-stick skillet brown chicken in oil for about 4 minutes on each side. Top with the mushrooms, cheese, green onions and bacon. Pour over about a half can of chicken broth.

Cover and continue cooking until chicken juices run clear and cheese is melted, about 5 minutes. If chicken seems dry or you like more liquid, add part or all of remaining broth, until heated. Enjoy!

This does sound different than other like recipes- I will have to try this one out- as we love chicken in this household..thanks for sharing.

You and me with Atkins, I feel so good when I'm doing it but, I "just always want a sandwich!!!!" HA HA HA!! chicken sounds great, will be giving it a GO!!!

Sherri, I read somewhere that there is a Japanese(?) noodle which is very low in carbs, but I don't remember the name of them, or where to buy them. Have you (or anyone else out there) heard of these? Maybe if I could have some some good old (low carb) macaroni and cheese once in a while, I could rsist the bread! Maybe... :)

Yes, I read about it, I don't know what it's called but, but what I read said you take it out of this package and rinse it in a strainer 3 or 4 times and it kinda gluey!!! Didn't sound like anything I wanted to try!!!
