Kathy's StoryCan chicken with graden veggies! A healthy way o enjoy a chicken salad!
12.5 oz. chicken, drained
green bell pepper, diced
red onion, dicd
celery stalks, dice
jalapeno pepper, diced
granny smith appled, peeled and diced
eggs, hard boiled
bag spring lettuce mix
1In a large bowl add the chicken and remaining ingredients, except lettuce mix.
Stir contents in bowl till combined.
2Add some spring lettuce mix to each salad plate. With a medium ice-cream scooper add a generous scoop to center of lettuce. Add several slices of tomatos around each plate. Enjoy!
