Fried chicken dinner for two

Tonight we tried cassies pierogies and made fried chicken (something we never have) and a spinach salad

Ingredients

FOR THE CHICKEN

2
boneless skinless chicken breasts
1 c
milk
2 Tbsp
white vinegar
1 1/2 tsp
grill mates montreal chicken seasoning
1 c
bisquick
1/2 tsp
garlic podwer

FOR THE SALAD

spinach fresh leaves enough for two salads
1-2
eggs boiled, cooled and sliced
1/3 c
shredded cheese
2 Tbsp
diced onions
1 small
tomato, cut or diced

Directions Step-By-Step

I made ahead the dough for cassies pierogies last night and made the potato mixture today. Then I put them together this morning and put in the fridge until I was ready.

Cook while chicken is cooking

For chicken

In the 1 cup milk add the vinegar and set aside 10 minutes.

Cut each breast into strips

Then in a medium bowl add the bisquick and spices. Then add the cured milk and mix well.

Coat chicken by dredging through the batter and fry on medium high heat until brown on both sides and done in the center, take out and drain on paper towels.

serve with a dipping sauce.

For the salad

Boil the eggs (optional for salad)

Layer spinach leaves on salad plate add onion and tomatoes, top with egg and cheese. serve with salad dressing

we even had leftovers. so this meal could even feed 3-4 people instead of two
