Ingredients
- 4 cups chicken stock, no salt
- 1 pound orzo pasta, uncooked
- 3 tablespoons butter + more for greasing dish
- 1 large onion, chopped
- 1 - 8 oz packages shiitake mushrooms, sliced
- 1 cup Brie cheese, diced
- 1/2 teaspoon salt & pepper
- 1 can French's fried onions
How To Make french fried onion topped orzo

Step 1Preheat the oven to 400 degrees F. Butter a 9" x 13" baking dish.

Step 2Bring the chicken stock to a boil over medium high heat in a medium saucepan. Add the orzo & cook until almost tender, 7 minutes. Pour the orzo & the broth into a large bowl. Set aside.

Step 3Meanwhile, melt the butter over medium heat in a medium skillet. Add the onions & saute until tender, 3 minutes. Add the mushrooms & continue to saute until the mushrooms are beginning to turn golden around the edges, 7 minutes. Add the mushroom mixture to the orzo in the large bowl. Season with salt & pepper. Stir to combine. Pour the mixture into the prepared baking dish.

Step 4Dot the top of the baking dish with brie & top evenly with french fried onions. Bake until golden, about 10 - 15 minutes.
