Feliciano Adobo Seasoning

This seasoning gives a characteristic and distinctive Caribbean flavor to chicken.
Rub the seasoning well into all the pieces of chicken, or both inside and out of a whole chicken, before roasting. It's also good for seasoning a pork roast.
Abuelita, my mother-in-law, uses this seasoning when making her recipe, Abuelita's Empanadillas.

FOR EACH 2 1/2 POUNDS OF CHICKEN:

3
whole black peppercorns

whole dried oregano
2 1/2 tsp
salt
1 1/2 tsp
olive oil
1/2 tsp
vinegar or lime juice

Step-By-Step

1Crush peppercorns, garlic cloves, oregano and salt in a mortar and pestle. Mix in the olive oil and vinegar or lime juice until all is well combined. Rub chicken with the seasoning before cooking.
