I love enchiladas, this is a typical Mexican dish hand down from grandma and mother. BUT I make them the Quick & Easy way, there are many ways to make, this enchiladas happen to be cooked on top of stove.. to be honest I don't like to cook them like this but for you I did. I think my kitchen had sauce in the ceiling when I was done haha!! I will post a recipe on my Oven bake Enchiladas in a later date. All my recipies are made MY way with a hint of my mommy and grandma! Hope you enjoy!

Ingredients For enchiladas in red sause

    tortillas, corn
  • 8
    chicken legs (shredded)
  • 2 c
    cheese, shredded...monterey
  • 1/2
    lettuce shredded
  • 1/2 md
    onion finely chopped
  • 4 c
    water
  • 3 Tbsp
    chile powder (california)
  • 1 Tbsp
    sugar (optiona) this gives a different taste
  • 1/2 tsp
    salt
  • 1 Tbsp
    cornstarch

How To Make enchiladas in red sause

    Add Chicken legs to a pot and let it cook for 20 minutes, let them cool then shred.

    While chicken is cooking, shred lettuce, shred cheese, chop onion (very fine) Mix Onion and cheese together (optional)

    Make red sauce, add water, chile powder, sugar and salt in a bowl, mix thoroughly. Put chile mixture in small pot and let it boil. Now this is the only hard part of this, add corstarch to a lil bit of cold water mix and while add your chile mixture to pot stirring accasionally so it will not form any clumps. Sauce will thicken not to thick. This will be at your own like if you like the sauce thick or thin.
  • Tortilla in sauce, looks like lots but its not!

    This is the messy part.. Heat oil, dip the tortillas in chile sauce and fry, just for them to soften. Fill tortilla with chicken and (lil bit of cheese and onion,) fold and place in a plate. When they are done add the cheese on top of the enchiladas and put them in microwave just for cheese to melt. You don't have to, I do. You can also top them with QUESO FRESCO!

    Serve with lettuce, side dishe for this enchiladas would be red Mexican rice and refried beans! This enchiladas are DELICIOSAS!
