Easy sweet-n-sour chicken

I make this when I want a quick sweet-n-sour chicken dish. It always satisfies me and hubby!

Ingredients

4
boneless, skinless chicken breasts, cut into 1' pieces
salt and pepper to taste
1 c
cornstarch
2 large
eggs, beaten
1/4 c
sesame oil
3/4 c
sugar
4 Tbsp
ketchup
1/2 c
apple cider
1 Tbsp
light soy sauce
1 tsp
garlic salt, or you can use garlic powder if trying to lower your sodium.

Step-By-Step

1Heat oven to 325. Heat oil in lg skillet, over medium heat. Season chicken pieces w/ salt and pepper. Place cornstarch in plastic, resealable bag. Add chicken to bag and shake to coat.

2In shallow bowl, place beaten eggs. Dip chicken into eggs. Place chicken in hot oil. Cook about 2 mins per side. Place chicken in a baking dish.

3In another bowl, mix together sugar, ketchup, apple cider, soy sauce and garlic salt or garlic powder. Pour sauce over chicken. Bake 1 hr, turning chicken over at least once. I serve this chicken over hot cooked rice. But it's fine w/out it!
