Ingredients

4 Tbsp olive oil, extra virgin
4 can(s) diced tomatoes with onion & garlic, undrained
4 clove garlic, minced
2 - 32 oz pkg chicken broth, low salt
1/4 tsp red pepper flakes
salt & pepper, to taste
1 Tbsp basil, dried
1 c parmigiano-reggiano, fresh
4 - 6 slice sourdough bread
butter
Pinched by andtwo, and 24 more.

This was sooo good! Really easy & quick to do! Nice soup.

 

Directions

Heat oil in a large saucepan over medium heat. Add tomatoes with juice & garlic & cook 4 minutes.

Add broth & season with salt, pepper & red pepper. Bring to gentle simmer & cook 10 minutes.

Meanwhile, while the soup is simmering, toast the bread & butter it. Place in bottom of soup bowl.

During the last 5 minutes of cooking time, add in basil & cheese; stir to combine. Ladel soup over bread & serve.

Hi Kimmy, this sounds good and I want to try it, however I am a little confused on the amount of olive oil - is it 4 tablespoons?
