Ingredients
- 4 tablespoons olive oil, extra-virgin
- 4 cans diced tomatoes with onion & garlic, undrained
- 4 cloves garlic, minced
- 2 - 32 oz packages chicken broth, low-salt
- 1/4 teaspoon red pepper flakes
- salt & pepper, to taste
- 1 tablespoon basil, dried
- 1 cup parmigiano-reggiano, fresh
- 4 - 6 slices sourdough bread
- butter
How To Make easy summertime tomato & bread soup

Step 1Heat oil in a large saucepan over medium heat. Add tomatoes with juice & garlic & cook 4 minutes.

Step 2Add broth & season with salt, pepper & red pepper. Bring to gentle simmer & cook 10 minutes.

Step 3Meanwhile, while the soup is simmering, toast the bread & butter it. Place in bottom of soup bowl.

Step 4During the last 5 minutes of cooking time, add in basil & cheese; stir to combine. Ladel soup over bread & serve.
