easy summertime tomato & bread soup

This was sooo good! Really easy & quick to do! Nice soup.

Ingredients

  • 4 tablespoons olive oil, extra-virgin
  • 4 cans diced tomatoes with onion & garlic, undrained
  • 4 cloves garlic, minced
  • 2 - 32 oz packages chicken broth, low-salt
  • 1/4 teaspoon red pepper flakes
  • salt & pepper, to taste
  • 1 tablespoon basil, dried
  • 1 cup parmigiano-reggiano, fresh
  • 4 - 6 slices sourdough bread
  • butter

How To Make easy summertime tomato & bread soup

  • Step 1
    Heat oil in a large saucepan over medium heat. Add tomatoes with juice & garlic & cook 4 minutes.
  • Step 2
    Add broth & season with salt, pepper & red pepper. Bring to gentle simmer & cook 10 minutes.
  • Step 3
    Meanwhile, while the soup is simmering, toast the bread & butter it. Place in bottom of soup bowl.
  • Step 4
    During the last 5 minutes of cooking time, add in basil & cheese; stir to combine. Ladel soup over bread & serve.
