Easy roasted pepper chicken

- boneless, skinless chicken breasts
- 12 oz jar roasted red peppers
- 2 c
- italian bread crumbs
- 3 Tbsp
- olive oil, extra virgin
- 1 c
- light sour cream
- 1/2 c
- crumbled feta cheese
1Cut pockets into thickest part of chicken, cut up the peppers and stuff some of them into the chicken pockets.
2Place bread crumbs into a plastic, resealabe bag. Place cchicken, one at a time into bag, shake tto coat. Heat oil in lg skillet over medium heat. Place chicken in pan, cook about 10 mins. Flip chicken over and cook another 10 mins,
3Cop any remaining peppers and place in a bowl w/ sour creaam. Whisk together. Cut each chicken in 1/2, place on plates. Drizzle w/ sour cream mix. Sprinkle w/ feta.
