NOTE: Use crabmeat, tuna, chicken, salmon, beef - your choice for the meat. Make sure meat is pre-cooked and flaked or shredded small. Mix all ingredients except the oil. Heat a skillet on medium heat and add olive oil. Form the mixture into small patties -about 5 to 6. Place the patties in the heated skillet and cook about 3 or 4 minutes on each side until golden brown. Drain on paper towels. Serve with ketchup, tartar sauce, salsa, etc. Double or triple recipe if needed.
