I make this chicken salad for my customers in a lil deli I work in. My customers love it and it is so easy to make. It's great as an appetizer or a light lunch or dinner.
wash chicken breast, cut into chunks. Put in a microwave bowl and cover with water. Add salt and pepper, cover with plastic wrap and cook on high for 25 minutes. Let cool
Cut cooled chicken into small pieces. Add mayonnaise, vinegar, and sweet relish and mix well. Refrigerate for 2 hrs before serving.
This salad will last up to 7 days in the refrigerator. Serve over lettuce, on crackers or as a sandwich.
