Easy Chicken Marsala

This tastes as good as any restaurant; and is very easy!

You can use a good quality Marsala wine of your choice. I find that I like it better with the sweeter kind.

Ingredients

4
chicken cutlets, pounded thin
1/2 c
flour
2 tsp
butter (do not use margarine)
2 c
thinly sliced mushrooms
1 Tbsp
olive oil
1 1/2 c
marsala wine (i use a good sweet kind from the wine section)
1 Tbsp
chopped parsley
salt and pepper to taste

Step-By-Step

1Dredge the cutlets in flour; shake off excess.
2melt butter and sautee the mushrooms until browned. Remove from pan once they are browned.
3Add olive oil and heat until very hot. Sautee the chicken until it is white throughout.
4Add the marsala and simmer about 3 minutes.
5Add mushrooms back in, parsley, salt and pepper.
6Pour the sauce over the chicken and serve.
