Easy Chicken Casserole

This is a very easy and very delicious recipe from 'The Lancaster County Cookbook', by Louise Stoltzfus and Jan Mast.

The recipe doesn't call for it, but a sprinkling of finely shredded cheese added to each serving adds a wonderful finishing touch! I think it's also a very versatile recipe; instead of using tater tots, you could probably substitute refrigerated biscuits.

Ingredients

2 c
diced, cooked chicken
1 c
diced, raw carrots
1 c
frozen peas
1 c
diced onion
1/2 tsp
salt
2 (10.75) oz
cans cream of chicken soup
1 medium
bag frozen tater tots

Step-By-Step

1Preheat oven to 350 F.

2Combine all ingredients except Tater Tots; tranfer to a greased 9 X 13-inch casserole dish.

3Arrange Tater Tots over top of cassrole ingredients.

4Cover and bake in the preheated oven for 1 1/2 hours.
