easy breezy chicken cordon bleu

My new best friend is packaged bread herb stuffing. Finding all kinds of good uses for it. Chicken Cordon Bleu was my husband's and my special anniversary/Valentine's dinner. Since he passed 12 yrs ago, I've made it every year in memory of our love. However, since I came up with this quickie, I may be making it more often. Enjoy.

Ingredients For easy breezy chicken cordon bleu

  • 2
    chicken breast halves, skinless and boneless
  • 2 slice
    ham (sandwich style)
  • 2 slice
    swiss cheese
  • 1
    egg, beaten
  • 1 c
    stuffing mix, herb-seasoned crushed to bread crumbs
  • 1 can
    cream of mushroom soup
  • 1/4 c
    milk
  • dill, fresh

How To Make easy breezy chicken cordon bleu

    Preheat oven to 350°. Grease 8x8 pan. Mix soup and milk in a small bowl. Beat egg in another bowl. Pound chicken breast to 1/2" thickness. Place a slice of ham and a slice of swiss cheese on breast. Carefully roll up. Dip into egg then roll in stuffing crumbs. Place in baking dish with open side down. Pour soup mix over chicken. Bake for 45 mins. Garnish with fresh dill.
