This deluxe red potato bake is a great one-pan meal. The star of the dish is the creamy red potatoes. They're mixed with a medley of vegetables and pieces of tender chicken. A zesty onion bacon ranch flavor is prominent throughout the dish. It's topped with more bacon bits and cheese. This easy dinner will quickly become a family favorite.

Ingredients For deluxe red potato bake (one-pan meal)

  • 2 1/2 lb
    skin-on red potatoes, cubed
  • 1 md
    green bell pepper, diced
  • 1 lb
    white button mushrooms, sliced
  • 1 md
    red onion or sweet Vidalia onion, diced
  • 2 md
    or one large boneless skinless chicken breast, diced
  • 1 oz
    Land o Lakes ranch seasoning
  • 2 1/2 oz
    real bacon pieces
  • 1/2 lb
    Colby/Jack or Monterey Jack cheese, shredded
  • pinch
    salt and pepper, to taste
  • non-stick spray

  • Spray a baking dish with non-stick spray.

    Spray a glass baking dish with non-stick spray.
  • Potatoes cut into bite-sized pieces and in a baking dish.

    Cut red potatoes into bite-size pieces.
  • Dice and slice other vegetables and add to the pan.

    Dice and slice other vegetables and add to the pan. The chicken can be cooked before or along with. I understand the concern about that, so do what you will. I personally just dice it up and add it along with the other ingredients and it cooks up perfectly.
  • Add bacon, seasonings, and mix.

    Add a third of the bacon pieces and the 1 oz. of ranch seasoning. Get your hands in there and mix it completely.
  • Bake the chicken and vegetables.

    Bake for one hour uncovered at 350 F depending on your oven.
  • Toss the partially baked potatoes.

    Pull out and check potatoes and give a quick toss. Put back in for another 15 minutes or until done.
  • Add the cheese and bacon.

    When you are satisfied everything is done, pull out and add 1/2 lb of shredded cheese and the last of the bacon bits.
  • Return dish to the oven to melt the cheese.

    Place once more into the oven to melt the cheese or bake it till it's crisp, your choice. I like ours to be gooey!
