I like curry and like his recipe as it is not tooo strong with curry flavor.

Ingredients For curry chicken on rice

  • 2 Tbsp
    vegetable oil
  • 1 lg
    onion, sliced
  • 2 Tbsp
    curry powder
  • 8
    chicken thighs, skinless and boneless
  • 1 can
    398ml coconut milk
  • 2 lg
    carrots sliced into coins
  • 2 lg
    sweet potatoes, cut into chunks
  • 1 md
    sweet green pepper cut into slices
  • 1 c
    frozen peas
  • 1/2 c
    chopped cilantro
  • 3 c
    cooked rice cooked according to package directions

How To Make curry chicken on rice

    Heata large wide frying pan over medium-high heat add oil then onion and curry powder, cook until onion starts to soften, sprinkle chicken with salt and pepper and add to pan and saute til chicken takes on a golden color.

    Add coconut milk, carrots, potatoes and pepper, and bring to a boil, lower heat, cover and cook until vegetables are tender about 15 to 20 minutes.

    Remove lid and continue cooking until liquid is slightly thickened about 5 minutes,stir in peas and cilantro...serve over cooked rice.
