Crunchy Chicken Salad

Doing a little experimenting to see exactly what I can and cannot eat. This is hard!
my husband liked the salad, but complained that it needed Ranch dressing.

Ingredients

8 oz
shredded oven roasted chicken
1 stick
celery
1/2 large
cucumber, peeled and diced
2 oz
red onion, diced
2 c
packed salad greens

DRESSING

1/4 c
white vinegar
salt and pepper to taste

Step-By-Step

1Shred your chicken or cut it into little chunks. Slice the celery and red onion, peel and dice the cucumber.
2Place the chicken, celery, cucumber and red onion in a bowl.
In a small bowl stir together the vinegar, salt and pepper. Pour over the chicken and veggie mixture and stir to coat the chicken and veggies.
3Divide the salad mix in half, and place on two plates.
Divide the chicken and veggie mixture in half and place on top of lettuce.
