I love using my crockpot and this is a recipe I had found online several years ago. I've tweaked it over the years and it's one of my go to meals on busy days when I'm out of the house most of the day.

Ingredients For crockpot chicken taco stew

  • 1 can
    black beans ( 16 oz)
  • 1 can
    kidney beans ( 16 oz )
  • 1 can
    corn ( 16 oz ) drained
  • 1 can
    tomatoe sauce ( 8 oz)
  • 2 can
    diced tomatoes with chili peppers ( 14.5 oz )
  • 1 pkg
    taco seasoning mix ( 1.25 oz )
  • 2
    boneless skinless chicken breasts

How To Make crockpot chicken taco stew

    Mix everything together in a slow cooker except chicken. Lay chicken on top and cover. Cook on low for 6-8 hours or on high for 3-4 hours. 30 minutes before serving remove chicken and shred. Return chicken to slow cooker and stir in. Serve with cheese, sour cream, or tortilla chips. Delicious served over brown rice too.
