CROCKPOT CASHEW CHICKEN

I'm looking for something different to use chicken leg quarters and this seems to fit the bill.

I plan on testing it next week and will update the recipe and add pics then. I will have to double the recipe for my family.

Ingredients

4 lb
chicken dark meat--cut into bite size pieces
1/2 c
flour
1 tsp
black pepper
2 Tbsp
oil
1/2 c
soy sauce
4 Tbsp
rice wine vinegar
4 Tbsp
katsup
2 Tbsp
brown sugar
2 clove
garlic--minced
1 tsp
fresh minced ginger
1/2 tsp
red pepper flakes
1 c
cashews

Directions Step-By-Step

Combine flour and pepper in resealable food storage bag.
Add chicken. Shake to coat with flour mixture.

Heat oil in skillet over medium-high heat.
Brown chicken about 2 minutes on each side.

Place chicken in slow cooker.

Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes in small bowl; pour over chicken.

Cook on LOW for 3 to 4 hours. Add cashews and stir. Server over rice.
