Wouldn't this just be a whole lot easier for Thanksgiving for a small family, than cooking a huge turkey? Turkey in crock pot leaves much room for side dishes in oven! Time saved! I'm doing this next year for Thanksgiving!!!! (Ok maybe sooner!)

Whisk in flour & cook, whisking constantly, until golden, about 2 minutes. Slowly whisk in broth & wine & bring to boil. Transfer gravy, thyme sprigs & bay leaves to crock pot.

-
3Transfer turkey to carving board, tent loosely with foil & let rest 15 - 20 minutes. Pour gravy through fine mesh strainer into serving bowl; discard solids. Stir 1 tsp thyme into gravy & season with salt & pepper. Carve turkey & serve with gravy.
