Crock pot Chicken and Dumplings... or noodles

This was one of my mothers cold weather specialties! Of course I have tweaked it a bit.
- carrots, sliced
- celery stalks, sliced (optional)
- 2 tsp
- celery salt
- 1 small
- onion, diced
- 2 - 3 lb
- whole chicken
- 1 tsp
- 1/2 tsp
- black pepper
- 1 c
- chicken broth
- 2 Tbsp
- greek seasoning
- batch of your favorite dumpling recipe (see my recipe if you dont have one)
- 16 oz
- egg noodles
1In a large crock pot layer carrots, celery, and onion.
2Rinse whole chicken removing giblets from cavity. And place on top of vegetables in crock pot. You can put the giblets in the bottom of the pot with the vegetables if you like.
3Cover and cook on Low 8-10 hours or on High 3 1/2-5 hours.
4Leaving the liquid in the pot remove the chicken and skim out the veggies (and giblets if you used them). Turning (or leaving) the crock pot on High and keep it covered tightly to keep it very hot.
5Debone the chicken. Cut large pieces into bite size bits.
6Add the veggies and deboned chicken back to the liquid in the pot. Cover tightly.
7Meanwhile mix up your dumplings. And add them or a package of egg noodles to the pot. Cover tightly again and cook for another 12-15 minutes or until dumplings or noodles are done.
