This wonderful Spanish chicken dish that's very easy to make, and it tastes wonderful. It's great with plain white rice (though I have served it with Spanish Rice, too).

  • 2 lb
    boneless skinless chicken (thighs or breasts), about 10 pieces
  • 1 sm
    onion, diced
  • 1 clove
    garlic, crushed
  • 1
    bell pepper, chopped (green, red, yellow or orange)
  • 4 lg
    plum tomatoes
  • 2 Tbsp
    alcaparrado or pitted spanish olives
  • 1/2 c
    water
  • 8 oz
    tomato sauce
  • 1/4 tsp
    dried oregano leaves
  • 1/4 tsp
    ground cumin
  • 1/2 tsp
    salt
  • 1-2
    bay leaves
  • 1/4 c
    cilantro, chopped
  • 5 sprig
    fresh cilantro, for garnish

How To Make crock pot chicken a la criolla

    Place chicken, onion, garlic, pepper, and tomatoes in the crock pot. Season with oregano, cumin and salt. Mix well, so everything is well seasoned.

    Add the tomato sauce and olives, about 1 tablespoon of the olive brine, water, bay leaf, and chopped cilantro. Mix well, and set crock pot to High for 4 hours or on Low for 6 hours.

    When done, taste and adjust seasonings as needed.

    Garnish each serving with fresh cilantro.
