Crock Pot Bourbon Street Chicken

2 lb boneless chicken breasts cut into bite-size pieces
2 Tbsp cornstarch
2 Tbsp extra virgin olive oil
2 garlic clove crushed
1/4 tsp ginger
3/4 tsp crushed red pepper flakes
1/4 c light apple juice
1/3 c light brown sugar
2 Tbsp organic ketchup or chili sauce (depending on how hot you like stuff)
1 Tbsp cider vinegar
1/2 c water
1/3 c reduced sodium soy sauce

Whisk all ingredients into crock pot and add chicken.
Cook on low for 8 hours or high for 4.
Serve over rice or mashed potatoes.

If you're lucky you won't get bombarded with all of us wanting BOURBON!!!! HAHAHAHAHAHA!!! Oh, how, I miss New Orleans!!!! Is everyone sick of me saying that yet???? I think I'll be saying that at least until it starts warming up!!!
