A creamy, easy to make chicken and pasta dish that's baked in a light alfredo sauce. Perfect for a quick, delicious dinner.

Ingredients

8 oz
ronzoni garden delight penne pasta
2
chopped shallots
1 tsp
minced garlic
1 Tbsp
olive oil
12 oz
boneless, skinless chicken breast, cut into small cubes
1/4 c
chicken broth
1/4 c
fresh basil, snipped
1 Tbsp
fresh parsley, snipped
10 oz
light alfredo sauce, like classico's
3/4 c
oil-packed dried tomatoes, drained, sliced thin
1/3 c
fat-free milk
1/2 c
shredded parmesan cheese
1/4 tsp
pepper

Step-By-Step

1Cook pasta as directed, drain. Heat oven to 350. Spray a 2-quart baking dish w/ cooking spray. In lg skillet over med-high heat, cook shallots and garlic 30 seconds. Add chicken and cook for 4 mins, stirring. Add broth, basil and parsley. Cook 1 min.
2In lg bowl, combine pasta, chicken mix, alfredo sauce, dried tomatoes, milk, 1/4 cup parmesan cheese and pepper. mix well.
3Transfer mix to baking diah. Sprinkle w/ remaining parmesan cheese. Cover, bake 15 mins. Uncover, bake 15 more mins.
