Ingredients For cream of sweet potato soup

  • 4 lg
    sweet potatoes, peeled & diced
  • 2 can
    chicken broth, low salt
  • 2 stick
    butter
  • 1/2 c
    dark brown sugar, firmly packed
  • 1 tsp
    nutmeg, ground
  • 1/2 tsp
    cloves, ground
  • 2 Tbsp
    cinnamon, ground
  • salt & pepper, to taste
  • 2 c
    heavy cream
  • GARNISH:
  • sour cream
  • marshmallows, mini

How To Make cream of sweet potato soup

    Line crock pot with Reynolds Slow Cooker Liner.
  • 2
    Put sweet potatoes & broth in crock pot. Cover & cook on HIGH 2 - 3 hours or until potatoes are tender.

    Place potatoes & liquid in blender or food processor. Pulse until smooth. Place back into crock pot with remaining ingredients.

    Cover & cook on HIGH 1 - 2 hours. Serve hot or chilled with a dollop of sour cream &/or mini marshmallows, if desired.
