Ingredients For country orange bourbon chicken

4chicken breast halves

1/3 cpecans, pulsed very fine

2 Tbspolive oil, extra virgin

salt & pepper, to taste

1 corange juice, unsweetened
-
2 tspsugar
-
1 dashallspice, ground
-
4 cpecans, chopped, toasted

4 Tbspall purpose flour
-
2 Tbspbutter, unsalted

1 clovegarlic, minced
-
1 tspcornstarch
-
1/2 cbourbon
-
2 Tbsporange zest
-
2 Tbspparsley
-
oranges, peeled & chopped, garnish

lemons, peeled & chopped, garnish
How To Make country orange bourbon chicken

1Place chicken between sheets of waxed paper & pound until about 1/2" thick.

2Mix flour & pecans & lightly dust chicken with mixture. Set aside.

3Heat butter & oil in a large skillet & saute garlic for approximately 30 seconds - 1 minute.

4Then saute chicken over medium heat until lightly browned, about 3 minutes on each side. Do not overcook. Season with salt & pepper & transfer to warm serving platter.

5Mix cornstarch into cold orange juice. Add orange juice to pan juices & stir over medium heat until thickened.

6Add bourbon, sugar, orange zest & allspice. Stir gently for 2 minutes or until reduced to sauce consistency.

7Pour sauce over chicken & garnish with parsley, whole pecans, orange & lemon slices & serve.
