cornbread chicken

This, as with many of my recipes, came from one of those moments where you are looking around your pantry saying "What the hell can I make with these things..." I think it came out really well and it stayed on the menu. I have tried oven baked and skillet fried versions and prefer the oven baked, as it is less greasy.

Ingredients For cornbread chicken

  • 1 box
    your favorite cornbread mix
  • 4
    bonesless, skinless chicken breasts or 8 bonesless, skinless thighs
  • 1/4 c
    water
  • 2 Tbsp
    extra virgin olive oil

How To Make cornbread chicken

  • 1
    Mix about half the box of cornbread mix, water and olive oil with any seasonings you like. I use a little garlic powder and some pepper. Batter should be thick, almost like brownie batter.

    Dip chicken pieces into batter and place on sprayed pan or baking dish.

    Bake 45 minutes to an hour, until cooked through. Check for internal temp of 165 degrees.

    Allow to sit for about five minutes after removing from oven. Enjoy!
