Ciao Bella Shredded BBQ Chicken

Love this recipe for so many reasons. For starters no heating up the oven, it's made in the crock pot. Also, I think it's a little healthier than using pork. Finally, it just tastes great!

Ingredients

3 lb
chicken breasts, boneless and skinless
2 c
celery, diced
1 medium
onion, diced

red bell pepper, diced
4 Tbsp
butter
2 c
ketchup
2 c
water
2 Tbsp
brown sugar
4 Tbsp
white vinegar
2 tsp
dry mustard
1 tsp
pepper
1 tsp
salt

Directions Step-By-Step

Steam chicken and cut into cubes. (You can take a short here and use store bought rotisserie too.) I like to steam mine to retain some moisture.

Combine cubed chicken and all other ingredients in a crock pot.

Cover and cook on low for 8 hours.

Stir chicken until it shreds. Serve on any kind of rolls.
