Chinese Chicken Salad

Chris Edwards

My mother passed this recipe down to me...she was in a Chinese cooking class in Eugene Oregon back in the 80s. She has since made this many times for potlucks, with everyone always wanting the recipe. I hope you enjoy this one as I do.

now for the dressing
1 Tbsp

Directions Step-By-Step

Fry the Rice Sticks quickly in hot oil being careful not to brown. Remove and drain on paper towels.
Toss together in a bowl the chicken, lettuce, green onions and almonds (Save the sesame seeds for the end)

You can easily put this together for a potluck. Combine everything when you arrive.
