Chilled Chicken Ranch Salad

This is another of those recipes made just because I didn't want to go to the store. I had some leftover baked chicken, so I decided to see what I had to make a salad. I'm not a fan of mayonnaise baked salads, so I decided to use sour cream and I think it gives it a better flavor.

Ingredients

3 medium
chicken breasts, boneless and skinless
1/4 c
pickles, diced
3 Tbsp
dry ranch dressing mix
1 1/4 c
sour cream, lite

Directions Step-By-Step

Preheat oven to 350 degrees. Bake chicken in oven-safe dish for 30 minutes. Cool completely and shred.

In a medium mixing bowl, combine chicken, diced pickles, and ranch dressing mix until evenly distributed. Stir in sour cream until well moxed. Cover and chill for at least 1 hour.

Serve with toasted bread, crackers, or lettuce leaves.

Note: If you do not have dry ranch dressing mix, prepared ranch dressing can be substituted. Simply decrease the amount of sour cream by 1/4 cup.
