6 - 7 lbroasting chicken

1 Tbspolive oil, extra virgin

2limes
-
1 smgreen bell pepper, cut into 1/2

1 smred bell pepper, cut into 1/2

1 smyellow bell pepper, cut into 1/2

1 lgonion, cut into 1/2
-
2 Tbspcilantro, fresh

6 - 8flour tortillas
-
mexican blend shredded cheese
-
sour cream
How To Make chili lime roast chicken fajitas

1Preheat oven to 350 degrees F. In a small bowl, combine chili powder, 1 tsp salt, coriander, oregano & garlic powder.

2Quarter 1 lime; place in chicken cavity.

3Place chicken in large roating pan. Brush chicken with oil.

4Sprinkle chicken with spice mixture. Roast 1 hour.

5Meanwhile, grate 1 tsp zest & squeeze 3 Tbsp juice from remaining lime into large bowl. Add peppers, onion & remaining 1/4 tsp salt; toss to coat. Let pepper mixture stand at room temperature while chicken is roasting.

6Arrange pepper mixture around chicken in pan. Continue roasting until chicken is no longer pink near bones, about 1 hour.

7Debone chicken into container with pan drippings. Toss pepper mixture with cilantro; add to another containerr. Heat tortillas according to package directions. Serve chicken & peppers with pan juices, cheese, sour cream & tortillas.
