Chicken with Yellow Rice

I love one-pan meals. This is a combination of several other recipes that I just put together. If you can't get or don't want to get GOYA products, you can substitute. I would guess some turmeric, coriander and salt should work.

Ingredients

1 Tbsp
olive oil
12 oz
chicken breast, cut into bite sized pieces
1 medium
pepper - yellow, red, green, poblano or a combination, chopped
1/2 medium
onion, diced
1/2 c
frozen corn
1 medium
tomato, seeded and chopped
1 Tbsp
chili powder
1 pkg
goya ® sazon with coriander and annatto
1/2 tsp
cumin
1 Tbsp
garlic, minced
1 c
long-grained white rice
lime slices and cilantro sprig for garnish

Step-By-Step

1Heat oil in skillet, add chicken and cook chicken until browned.

2While chicken is cooking, chop and add veggies and continue to cook until wilted, stirring occasionally. Add seasonings and rice. Stir for a minute.

3Add 2 cups hot water to pan. Bring to boil, cover and simmer until rice is tender, about 25 minutes.
Fluff, squeeze in a little lime juice, garnish and serve.
