as a diabetic i am tryin very hard to eat better,healthier... more veggies less carbs...and for me pasta does not cause my sugars to go to high like rice does so for me eatin pasta is ok....i came up with this hubby loves it too.......

chicken tenders,cubed
1 can(s)
mandarin oranges,drained[save juice]
1/2 c
low salt soy sauce
1/2 c
creamy peanut butter
1/2 large
root fresh ginger,grated fine
4-6 clove
fresh garlic,minced
1/4 c
white vinegar
1/2 c
orange juice, frozen concentrate,thawed
1/8 tsp
red pepper flakes
1/2 tsp
fresh ground black pepper
1 medium
white onion,chopped
1 c
mixed color bell pepper,chopped
2 medium
ribs celery with leaves,chopped
1 can(s)
bamboo shoots,drained
1 can(s)
water chestnuts,drained
1 can(s)
bean sprouts,drained
1/2 c
salted peanuts
handful chopped parsley
2 Tbsp
cornstarch mixed with juice from mandrin oranges
servings whole wheat spag

Directions Step-By-Step

night before..... mix soy sauce,ginger,garlic,red pepper flakes,black pepper,thawed frozen oj,vinegar,and peanut butter in med bowl add chicken cubes... stir to coat well... cover put in fridge... stir several times durin evenin and in mornin..
in lg stock pot sprayed with nonstick spray add drained chicken[keep the juice] cook and stir til browned remove from pan add onion,bell peppers celery cook bout 5 min
in another lg pan boil water for spag........cook by pkg direction once cooked drain keep warm
now add bamboo shoots,bean sprouts,water chestnuts cook and stir til hot add marinate from chicken simmer bout 15 min add chicken
now add oranges and cornstarch mix cook and stir til it boils boil a couple min
divide spag on plates divide sauce on each plate garnish with parsley and peanuts and ENJOY!!!
