Ingredients For chicken tomato-torellini soup (or without chicken)

  • 1 - 32 oz
    container kitchen basics chicken stock
  • 2 c
    water
  • 2 - 9 oz. pkg
    butoni refrigerated tortellini, i used three-cheese tortellini
  • 2 - 8 oz. pkg
    tubs philadelphia cream cheese with chives & onion
  • 2 - 10 3/4 can
    tomato soup or tomato bisque soup
  • 1
    rotisserie chicken, taken off bones & cut up into bite-sized pieces (optional)
  • chives, dried

How To Make chicken tomato-torellini soup (or without chicken)

    In a medium saucepan, bring stock & water to boiling.

    Add tortellini; reduce heat. Simmer, uncovered, for 5 minutes.

    In a bowl, whisk 2 C. of the hot stock into cream cheese until smooth.

    Return all to saucepan along with tomato soup & chicken (if using); heat through, about 5-8 minutes.

    Sprinkle with chives before serving.
