Chicken & shrimp spanish rice

An easy way to make spanish rice.
The chicken and shrimp go well w/ this rice.

Ingredients

1 pkg
spanish rice mix
8 oz
boneless, skinless chicken breasts, cut into 1" pieces
1
green bell pepper, chopped
1/2 c
red onion, chopped
1
14-1/2 oz can whole tomatoes, cut up
1/4 c
chicken broth
1 tsp
minced garlic
8 oz
lg shrimp, peeled, deveined
1 c
frozen peas, thawed
1
4 oz can diced green chiles
3/4 tsp
dried thyme
salt & pepper to taste

Step-By-Step

1Prepare rice as directed on pkg. Speay a lg skillet w/ cooking spray.
2Place skillet over medium heat. Add chicken, green pepper, onion and thyme to skillet. Cook until chicken is no longer pink.
3Stir in undrained tomatoes, broth and garlic. Bring to boil, reduce heat and simmer for 10 mins. Add shrimp, peas and chiles. Cook, stirring for about 5 min, or until shrimp are pink. Season w/ salt and pepper. Serve mix over rice.
