There so many ways to prepare chicken and when chicken is on sale at the supermarket I usually stock up on breasts, legs and whole chicken..this kind of meal is healthy,and easy to prepare.

Ingredients For chicken scaloppini

    tomatoes chopped
  • 1/4 c
    pitted kalamata olives, pitted and cut in half
  • 3
    green onions chopped
  • 1 Tbsp
    olive oil
  • 2 Tbsp
    fresh basil chopped
  • 1 c
    feta cheese crumbled
  • 4 lg
    chicken cutlets
  • 1 Tbsp
    flour
  • 1/4 tsp
    each sea salt and cracked black peooer
  • 2 Tbsp
    olive oil

How To Make chicken scaloppini

    In bowl combine tomatoes,olives, green onions, oil, basil and feta cheese stir and set aside

    Coat chicken cutlets in flour,,in large frying pan heat the oil over medium high heat, cook in to batched until chicken is browned, crisp and cooked through. Place chicken on serving plates and top each one with the salsa. great served with crusty garlic bread, to mop up the sauce instead of licking the plate...yum
