Chicken Satay with Peanut Sauce

|8||10 inch bamboo skewers that have been soaked in water for at least 30 minutes|
|1 1/2 lb||boneless, skinless chicken breasts, cut into 1-inch strips|

DirectionsWeave chicken pieces onto skewers. Combine lime juice, oil, salt and pepper and brush on skewered chicken pieces.Heat grill to medium-high.Prepare the sauce at this time by warming peanut butter in a small bowl in the microwave. Whisk in hoisin sauce,lime juice and chili-garlic sauce. Add water(more or less depending on your desired thickness.Lightly oil your grill and grill the skewers for about 3 minutes per side or until the chicken is thoroughly cooked. Serve with the peanut sauce, goes great with a nice basmati or jasmine rice. For a real nice change try using coconut water to cook your rice in to serve with these kebabs.
