Chicken Satay with Peanut Sauce

|8||10 inch bamboo skewers that have been soaked in water for at least 30 minutes|
|1 1/2 lb||boneless, skinless chicken breasts, cut into 1-inch strips|
|2 Tbsp||fresh lime juice|
|1 Tbsp||olive oil|
|1/2 tsp||sea salt|
|1/4 c||creamy peanut butter|
|2 1/2 Tbsp||hoisin sauce|
|1 Tbsp||fresh lime juice|
|1 tsp||chili-garlic sauce|

This summer we really enjoyed making kebabs and this was one of of favorites. This picture and recipe is from the Relish magazine I hope you like them as much as we have.
Weave chicken pieces onto skewers. Combine lime juice, oil, salt and pepper and brush on skewered chicken pieces.
Heat grill to medium-high.
Prepare the sauce at this time by warming peanut butter in a small bowl in the microwave. Whisk in hoisin sauce,lime juice and chili-garlic sauce. Add water(more or less depending on your desired thickness.
Lightly oil your grill and grill the skewers for about 3 minutes per side or until the chicken is thoroughly cooked. Serve with the peanut sauce, goes great with a nice basmati or jasmine rice. For a real nice change try using coconut water to cook your rice in to serve with these kebabs.
