Chris' Story

This summer we really enjoyed making kebabs and this was one of of favorites. This picture and recipe is from the Relish magazine I hope you like them as much as we have.

10 inch bamboo skewers that have been soaked in water for at least 30 minutes
1 1/2 lb
boneless, skinless chicken breasts, cut into 1-inch strips
2 Tbsp
fresh lime juice
1 Tbsp
olive oil
1/2 tsp
sea salt
1/4 tsp
1/4 c
creamy peanut butter
2 1/2 Tbsp
hoisin sauce
1 Tbsp
fresh lime juice
1 tsp
chili-garlic sauce
3/4 c

Directions Step-By-Step

Weave chicken pieces onto skewers. Combine lime juice, oil, salt and pepper and brush on skewered chicken pieces.
Heat grill to medium-high.
Prepare the sauce at this time by warming peanut butter in a small bowl in the microwave. Whisk in hoisin sauce, lime juice and chili-garlic sauce. Add water(more or less depending on your desired thickness.
Lightly oil your grill and grill the skewers for about 3 minutes per side or until the chicken is thoroughly cooked. Serve with the peanut sauce, goes great with a nice basmati or jasmine rice. For a real nice change try using coconut water to cook your rice in to serve with these kebabs.
